What I Eat before Workout On Weekends

Welcome Back! I hope everyone had a good weekend so far.

I have been trying to cook more at home and in this post I’d love to show you what I would normally eat before working out on a weekend.

I signed up for two equinox classes for the past Sunday so I always like to make myself a big breakfast. This time I made avocado kale onions omelet using some leftovers from last week which turned out to be super yummy.

First I brought out all of the ingredients that I need:

  • Two eggs
  • 1/4 red onions, chopped
  • 1 cup of kale, chopped
  • 1 avocado, sliced
  • 1 tablespoon of almond milk
  • Some garden tomatoes (optional)

Then I beat two eggs and one tablespoon of almond milk with a bit of salt in a small bowl until blended and chopped all veggies.

After that, I heated the pan with about one tablespoon of coconut oil and poured the egg mix into the pan and flipped to the other side after about 30 seconds.

After another 30 seconds, I put it into another plate so I could start cooking veggies.

In about 3-5 minutes (also could add 1 tablespoon of water to help cook the kale and onions down), I placed the egg on top of the vegetables for another 30 seconds.

Then put it into a plate, added pre-sliced avocados. Viola!

I also added some pink salt (from Trader Joe’s), red peppers, and freshly grounded black pepper to season.

I have been with Equinox for almost a year now and I really enjoy taking their classes especially on weekends (normally I would try to do two classes back to back – one a bit more intense followed by yoga to stretch and relax). This past Sunday I took ‘Best Butt Ever’ with Lindsay and ‘Vinyasa Yoga’ with Yanik at Equinox Soho location.

I took ‘Best Butt Ever’ with Lindsay before – I really like her! She is super enthusiastic so you feel great during/after the class! As you can probably guess from the name of it, this class is designed to lift and shape; hence, there is a lot of squats, lunges, and core training. The class is 45 minutes but I have to leave the class 3 minutes early to go to the yoga studio and set up for this yoga class. This was the first time I went to Yanik’s class but I really enjoyed his flows and instructions. One hour flew by.

After the class, I went to Topshop to do some returns but ended up getting a new pair of boots (>_<)! For some reason this always happens to me!

When I got home I was feeling pretty hungry but it was too early to start cooking dinner so I made myself a post-workout smoothie to sooth the cravings for a Chipotle bowl.

I used half of a frozen banana, 1/2 cup of sliced pineapple, 1/2 cup of sliced mangos, about 1/2 cup of greek vanilla yogurt with some almond milk and ice and a tablespoon of chia seeds. It turned out to be this gorgeous and super delicious dessert-like smoothie ❤ Will definitely try some other variation next time.

So this is it – what I ate this past Sunday before working out. I always find it is much easier to make a wholesome breakfast on weekends (on weekdays I am more like a croissant-for-the-road kind of girl haha.
